| CHUNKY CHEESE MUFFINS |

UNCLE SALIE WHOLEWHEAT BREAD |
| 140 g |
Self-raising flour |
| 100 g |
Cheddar cheese, grated |
| 1 |
Onion, grated and fried |
| 2 |
Eggs, beaten |
5 ml |
Paprika |
5 ml |
Salt |
| 150 ml |
Evaporated milk |
| 50 ml |
Vegetable oil |

Extra paprika and grated cheese for garnish |

| METHOD: |

Remove crust from bread and cut up in cubes. |

In a bowl, gently mix together all ingredients until blended. |

Spoon into greased muffin tins. |

Bake in a pre-heated oven at 190°C for 20 minutes or until golden brown. |

Turn onto cooling rack and sprinkle with cheese and extra paprika. |
