Honey Crumpets
Makes: 24

Ingredients
200 ml
cooked Crossbow Yellow Split Peas
200 ml
self-raising flour
15 ml
castor sugar
15 ml
honey
1
egg, beaten
200 ml
milk

Method

  1. Mash the peas or process them in a food processor.
  2. Sieve the dry ingredients together.
  3. Mix the honey and egg.
  4. Make a hollow in the flour mixture and pour the honey and egg mixture and some of the milk into it.
  5. Add the rest of the milk gradually. Mix well.
  6. Add the pea puree. Mix until smooth.
  7. Oil a frying pan and heat.
  8. Arrange spoonfuls of the mixture in the frying pan and bake on both sides until golden brown.
  9. Serve the crumpets with syrup or jam.
