Honey Crumpets

200 ml |
cooked Crossbow Yellow Split Peas |
200 ml |
self-raising flour |
15 ml |
castor sugar |
15 ml |
honey |
1 |
egg, beaten |
200 ml |
milk |
Method
- Mash the peas or process them in a food processor.
- Sieve the dry ingredients together.
- Mix the honey and egg.
- Make a hollow in the flour mixture and pour the honey and egg mixture and some of the milk into it.
- Add the rest of the milk gradually. Mix well.
- Add the pea puree. Mix until smooth.
- Oil a frying pan and heat.
- Arrange spoonfuls of the mixture in the frying pan and bake on both sides until golden brown.
- Serve the crumpets with syrup or jam.
