CHICKPEA BITES - India

WHITE STAR SUPER MAIZE MEAL (340 ml) |

small onion, chopped |

can chickpeas, drained and roughly chopped |

green chilli, seeded and chopped (optional) |

• oil for deep fat frying |

Method
- Heat oil in a heavy based saucepan. Add onion and garlic and sauté until onions are translucent.
Add boiling water and salt. Stir in the White Star Super Maize Meal until mixture is smooth, then cover and simmer for 30 minutes. Allow to cool.
- Add remaining ingredients and mix well.
- Heat oil in a heavy based saucepan. Using two teaspoons, drop batter in small amounts into hot oil. Fry until golden brown and drain on kitchen paper. Serve immediately with lemon wedges or Keehra pudina raita.
DIP OPTION (YOGHURT WITH CUCUMBER & MINT)
Mix 250 ml low fat yoghurt, 2 ml ground cumin, 1 ml chilli powder, 1 ml freshly ground black pepper, 2 ml sugar, pinch of salt and 100 ml peeled and grated cucumber, 10 ml chopped fresh mint together.
