CAJUN WHITE STAR SUPER MAIZE MEAL WITH SPICY CHICKEN LIVERS

butter |

onion, chopped |

crushed garlic |

green pepper, seeded and chopped |

celery stick, diced |

salt and freshly ground black pepper, to taste |

tub chicken livers |
15 ml |
cake flour |

Method
- Heat the butter in a large heavy based pan. Add the onions and garlic and sauté until onions are translucent. Add the Tabasco, herbs and spices and fry for 3 minutes.
- Add the chicken stock and mix well. Stir in the White Star Super maize meal until mixture is smooth then cover and simmer for 30 minutes.
- For livers: Heat the butter in a heavy based frying pan. Add the onion, garlic, peppers and celery and sauté until onions are translucent. Add the spices and seasoning and heat until fragrant. Add the livers and cook for 5 minutes stirring regularly. Remove from heat and sprinkle with flour. Stir until flour is absorbed. Return to heat. Gradually add the chicken stock and stir until the sauce is smooth and thickened.
- Spoon the maize meal porridge into plates and top with the livers.
Serve immediately.
