FRIED HALOUMI CHEESE WITH ROCKET SALAD & WHITE STAR SUPER MAIZE MEAL CROUTONS - Greece
Serves 4

Ingredients Maize meal croutons
85 g
WHITE STAR SUPER MAIZE MEAL (125 ml)
500 ml
water
5 ml
salt
10 ml
chopped fresh sage
30 ml
butter
  • olive oil for frying
Salad
15 ml
red wine vinegar
60 ml

extra virgin olive oil

50 g
rocket leaves

Calamata olives
  • sea salt and freshly ground black pepper
Fried cheese
30 ml
olive oil
8 slices
haloumi cheese, 1 cm thick
  • freshly ground black pepper to taste

Method

  1. For croutons: Heat water in a heavy based saucepan. Add salt and sage. Stir in the White Star Super Maize Meal until mixture is smooth, then cover and simmer for 30 minutes. Stir inthe butter and pour into a greased 17cm x 17cm square cake tin.

    Use a spatula to smooth the top. Allow to cool completely. Turn maize meal on to a cutting board and cut into 1 cm squares. Heat olive oil in a heavy based frying pan and fry in batches until crisp and golden brown in colour. Drain on kitchen paper.

  2. For salad: Lightly toss ingredients together and spoon on to serving plate.

  3. For fried cheese: Heat olive oil in a heavy based griddle pan. Fry cheese until crispy and golden in colour. Season with freshly ground black pepper.

  4. Remove from pan immediately and place on to dressed rocket salad. Sprinkle with maize meal croutons and serve immediately.
