2 (14.11 oz)Â tins of butter beans (drained and rinsed)
2Â cloves garlic
2.02 oz lemon juice
Grated rind of 1 small lemon
2.02 oz olive oil
Pinch salt and pepper
1 tsp fresh thyme
Method
Place all the topping ingredients into a bowl and mash gently with a fork leaving some butter beans whole in the mixture. Taste the mixture and add a little more salt and pepper if necessary.
Preheat the Grill.
Cut the SASKO Rolls into rounds approximately 1 cm thick and place them onto a baking tray.
Drizzle with olive oil and grill on both sides until golden brown.
Place tablespoons of the butter bean mixture onto each toast, drizzle with a little more olive oil and serve.
