Ingredients

Dressing:

  • 3 anchovy fillets (finely chopped)
  • 60 ml olive oil
  • 80 ml mayonnaise
  • 1 tsp lemon juice
  • 1 tsp dijon mustard
  • Pinch black Pepper
  • 60 ml finely grated Parmesan
  • 2 tbsp Water

Salad:

Method

  1. Preheat oven to 180°C.
  2. Take 3 Sesame Buns, halve them and then cut them into cubes.
  3. Scatter them over a baking tray and drizzle over a little olive oil before baking in the oven for 10 minutes or until they are golden brown and crisp. Set aside to cool.
  4. Place the chopped anchovy fillets and olive oil into a bowl and whisk until the anchovies have broken down, then add the remaining dressing ingredients and whisk to combine.
  5. Scatter the lettuce over a large serving dish and top with the crisped bread and Parmesan.
  6. Drizzle over your desired amount of dressing and serve.
